Here’s the deal: I don’t like oatmeal. I want to like oatmeal. I try to like oatmeal. I just can’t like oatmeal. However, I love these! My kids love these! I’m banking on you loving these!
Here’s how I did it:
Ingredients: I forgot to put the eggs in this picture.
First mash up two very ripe bananas.
Then add your two eggs, 1/4 cup pure maple syrup, and 2 teaspoons vanilla extract. Now whisk it all together.
Now slowly whisk in 1 cup milk, and 1/4 cup oil. (I used 2% and canola)
Then add 3 cups old fashioned oats (or rolled oats), 1/2 teaspoon cinnamon, 1/8 teaspoon nutmeg, 1 teaspoon baking powder, and 1/4 teaspoon salt.
Mix all of that together then add your chocolate chips. I usually just add about half the bag.
Spray your muffin pan (I use and recommend Pam Coconut oil spray) and then fill with the mixture. These do not rise so you don’t have to worry about them spilling over, and you will have enough mixture to completely fill each of the 12 cups.
Bake at 350 degrees for 30 minutes. Let cool a bit and then enjoy!
The first time we tried these we added some powdered sugar. It was good, but these really are sweet enough to not need it so we haven’t added it since. The recipe I use also suggests adding a little maple syrup on top, but we haven’t tried that one.
