Yes, I had already dished up the first piece of chicken. 😀
This is RC’s favorite meal. Seriously, his absolute favorite. I don’t make it that often because it’s a little pricey for our normal budget, but it’s Christmastime right now so I made it recently. It’s so easy and so yummy that I thought you might want to try it this season too.
You’ll need: chicken breasts (there were 5 in the package we bought and I cut them in half), sliced swiss cheese, cream of chicken soup, white wine (we used pinot grigio), cornbread stuffing, melted butter, and (not shown) minced garlic, more butter, and frozen green beans.
First, lay chicken in pan and cover with swiss cheese slices:
Then, mix two cans cream of chicken soup with 1/2 cup white wine and pour over chicken and cheese:
Sprinkle stuffing all over top (I used about 3/4 of this bag. I usually buy the boxed kind and use the whole thing) and drizzle 1/2 cup (1 stick) melted butter over the stuffing:
Bake at 350 for 45-55 minutes.
After about 30 minutes of the chicken baking, melt 1/2 stick of butter and 2 tablespoons minced garlic in a pan. Once it’s melted and infused, add the frozen green beans and stir to coat. Heat through stirring occasionally.
The green beans and chicken should finish together (or at least not too far apart).
Easy peasy and so very yummy!
