Tell me that doesn’t sound like an amazing combination. Funfetti cake with strawberry icing is my go to birthday cake. For years this has been the cake I look forward to on my special day. I honestly didn’t think it could get any better. but then I started seeing Fruity Pebble desserts all over Pinterest and thought, “Now that might make my favorite cake even better!” And you know what? It did!
I baked the cake using the directions on the box. I have two silicone round baking pans that I love. I made the mistake of spraying them with cooking spray the first couple of times I used them, but just fyi, they don’t need cooking spray. That’s the beauty of silicone. Also, they are great for RVing. Light and they don’t slide around in the cabinets and if they accidently fall out, they don’t hurt when they hit you on the head. Not that I know from experience. 😉
Instead of removing the cakes from the pans and displaying them on a fancy cake stand or plate, I don’t. I lightly frosted one of the cakes:
Then I sat the other cake on top of it in the cake pan:
It is so much easier to store this way. We won’t eat this whole cake in one sitting, so it’s gonna get covered and stored. I then frosted the top of the cake.
It’s not the prettiest, but it is super yummy. Then I cut myself a piece and sprinkled it with Fruity Pebbles.
I don’t recommend putting the Fruity Pebbles on the whole cake unless it is all gonna get eaten right away. The Fruity Pebbles will get soggy if they sit on the frosting for too long. They add such a fun crunch and, of course, add the wonderfully fruity flavor of an awesome breakfast cereal.
And the reason I only make this cake for my birthday: I’ve had four pieces in three days. :-/ It has breakfast cereal on it so it must work for breakfast, too, right?!? Seriously, it was so good with my coffee!
