Last summer R.C. and I did a whole 30. If you don’t know what that is just google it and you’ll have a plethora of information on it. There are a few recipes from that time that I have kept in rotation. This one is probably my favorite. It is super easy, super duper yummy, and has bacon it. Seriously, do I need to say anymore?
When I was just making this for RC and myself, I would do four pieces of bacon, one sweet potato (good sized), one apple, and half an onion. This time I was making it for all six of of us. This is truly all you need for this recipe. No olive oil or salt and pepper- just these five ingredients.
First, peel your sweet potatoes. You can also peel your apples if you want, but I like those with the skin on.
Next, slice up your bacon. I just slice the whole bunch together. The pieces separate as you cook them, so once all the bacon is sliced, put it in a pot over medium-low heat.
It is important that you use a slotted spoon, because once the bacon is cooked you are going to remove it, but you want all that amazing bacon grease to remain in the pot. While the bacon is cooking, chop up the sweet potatoes, apples, and onion.
While you’re chopping, don’t forget to take breaks to stir the bacon. This is why I cook the bacon on medium-low, it gives me enough time to chop everything without burning the bacon.
When the bacon is done, remove it from the pot with a slotted spoon, trying to retain as much grease as possible. I put my bacon on a paper towel covered plate to absorb the extra grease (hopefully not much).
Now, dump all your chopped stuff in the pot with the bacon grease and sprinkle in some cinnamon. I just eyeball it, but I would guess 2-3 tsp. Stir everything and cover with the lid so it can cook. Continue to stir ever few minutes until everything is tender. You can use a fork to check, but I can usually tell as I am stirring it. I then turn the heat off and stir in the bacon.
This isn’t the most photogenic meal, but I promise it is one of the tastiest. You seriously need to try this.
